How it's made

Forged by hand, mostly from spring steel (sometimes 52100, 115CrV3, 80CrV2 or Damascus): hot forged, annealed, then cold forged. The heat treatment is done in the workshop in a 200-litre, temperature-controlled quench tank.

Every blade is ground freehand on water-cooled belt grinders, and the handle and sheath are made in the workshop.

Care

Carbon steel reacts with food and moisture. Keep the blade dry and rinse it in cold water after use; over time a patina builds that protects the blade from rust.

Hand wash only, never the dishwasher. Sharpening and patina removal: see Knife care.
