How it's made

Japanese shapes, made by hand in Finland. Blades are forged or ground freehand under constant water cooling, and handles are made in the workshop, some from stabilised curly birch grown right outside the forge.

Care

Hand-wash in cold water and dry straight away. Never soak it or use a dishwasher, and store it so the edge doesn't touch other objects.

Carbon steel blades build a protective patina over time. Sharpen on Japanese whetstones, not powered systems. More in Knife care.
